        イネやダイズ、ソバ種子の品質改善と登熟機構の解明
      • Overview of the research

         全世界人口の約半数が主食としている米は、必須アミノ酸であるリジンが不足し栄養性改善が望まれる。また我が国では、加工特性や生理機能性、食味の優れた新形質米の開発が期待される一方で、高温登熟による外観品質低下を防ぐことが課題となっている。そこで、タンパク質など米の主要成分の組成を遺伝的・栽培技術的に改変したり、野生イネや突然変異体などから優れた遺伝資源を探索している。また、穂培養法を用いた種子登熟機構の解析や、新規食味形質の開発を進めている。一方ソバは、やせ地・乾燥地などの不良環境下でも短期間で育ち病害虫・雑草の害を受けにくい上に、優れた嗜好性・栄養性、血圧上昇抑制など様々な生理機能性を有していることから、世界中で注目されている作物である。しかし、時に深刻なアレルギー反応を示す場合があり、その低減化に向け原因物質アレルゲンである貯蔵タンパク質の解析を進めている。
