      Research Topics, Overview of the research

      • Research Topics

        (1) Improvement of the physiological functions of dietary fibers by using nano-technology: Application of novel functionality of cellulose nanofibers in food processing.
        (2) Organoleptic functions of food and its internal tertiary structure: Development of methodology for the imaging of food structure to elucidate the organoleptic functions of food.
        (3) Mechanobiology of the gastrointestinal epithelia: Biological responses of the gastrointestinal epithelia for shear stress and strech mechanostress.
        (4) Mucosal immunology and functional design of mucosa-interacting components: Elucidation of sensing mechanism to the gastrointestinal environment for the mucosal homeostasis to prevent food allergy and diabete millitus.
      • Overview of the research

        (1) We are developing functional food materials derived from under-used resources by using nano-technology.
        (2) We are trying to elucidate the relationship between tertiary food microstructures and organoleptic functions of foods by developing a novel imaging technology.
        (3) We are examining how physicochemical properties of flow shear stress by foods and indigenous commensal microflora can affect the gastrointestinal functions such as motility, regeneration, and mucosal immunity.
        (4) Focusing on macromolecules such as proteins and nucleic acids in biological soft matters including milk and egg components, we are analyzing their structural characteristics to control intestinal homeostasis, in an effort to improve prophylactic interventions in allergies and diabetes mellitus.
